Cajun and Creole   -   Okra Etouffee   adapted from Cookin With Queen Ida

Ingredients
  • 2 Pounds Okra -- sliced
  • 1/4 Cup Olive Oil
  • Salt And Pepper -- to taste
  • 1 Large Onion -- chopped
  • 1 Medium Bell Pepper -- chopped
  • 2 Cloves Garlic -- chopped
  • 1 Pound Smoked Sausage -- sliced
  • 2 Large Tomatoes -- chopped
  • 1 Teaspoon Cayenne
  • 1 1/4 Cups Water
  • Rice -- cooked
Directions Saute okra in oil about 20 minutes. salt lightly, and then add: onion, pepper and garlic. Saute until onion is soft. Add sausage, tomatoes, cayenne and pepper. Saute until sausage is browning. Stir in water and simmer 30 minutes. Serve over rice.
Serves 4
