Cajun and Creole - Oven Fried Catfish

Ingredients

- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Onion Powder
- 1 Teaspoon Basil
- 1/2 Teaspoon Paprika
- 1 Teaspoon Pepper
- 1/2 Teaspoon Oregano
- 1/2 Teaspoon Cumin
- 1/4 Teaspoon Cayenne
- 4 Medium Catfish Fillets
- 1/2 Cup Toasted Bread Crumbs
- 2 Tablespoons Parsley -- finely chopped
- 3 Tablespoons Green Onion -- finely chopped
- 1 Tablespoon Olive Oil

Directions

Combine spices in a small bowl. Sprinkle fish with 4 teaspoons of seasoning mix. Preheat oven to 450 degrees. Combine bread crumbs, parsley, green onions and remaining seasoning mix. Add oil and mix it until crumbs are moist. Dredge fish in bread crumb mixture, pressing it into each fish piece. Shake gently. Place fish on nonstick baking sheet, and cook for 6 minutes. Turn over and cook for 6 more minutes. Turn over once more and cook for 4 minutes. Serve.
