Cajun and Creole   -   Pasta And Creole Crabmeat Soup   adapted from The world of Pasta

  • 3 Tablespoons Butter
  • 2 Medium Onions -- chopped
  • 3 Tablespoons Flour
  • 1 Small Bay Leaf
  • 6 Medium Tomatoes -- chopped
  • 2 Cups Crabmeat
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 9 Cups Chicken Broth
  • 1 Medium Guajillo Pepper -- ground
  • 1 Dash Worcestershire Sauce
  • Hot Sauce -- to taste
  • 1/2 Teaspoon Cumin
  • 2 Small Okra -- thinly sliced
  • 12 Ounces Funghini
Directions saute onion in butter until soft. Stir in flour and cook for 8 minutes or until brown. add bay leaf, tomatoes, and crabmeat. cook covered over low heat for 10 minutes. add salt, pepper, ground guajillo, worcestershire sauce, hot sauce and chicken broth. bring to boil, reduce heat, simmer, covered for 25 minutes. stir in okra and pasta. Cook until pasta is al dente. Read package for recommended time.
