Cajun and Creole   -   Red Bean Soup   adapted from Emeril Lagasse

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Medium Onion -- Chopped
  • 2 Stalks Celery -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Cayenne
  • 1/4 Teaspoon Pepper
  • 4 Medium Bay Leaf
  • 2 Quarts Chicken Stock
  • 4 Cups Red Beans -- Cooked
  • 1/4 Cup Sherry
  • 1 Bunch Green Onion -- Chopped
  • 1/4 Cup Parsley -- Chopped
  • 1/2 Teaspoon Tabasco Sauce
Directions Saute in oil, onions, celery, peppers, salt, cayenne, pepper and bay leaves for 5 minutes. Add broth and simmer for 1 hour. Add beans, warm through, add sherry, green onions, parsley and tabasco. Warm through and serve. Discard bay leaves.
