Cajun and Creole   -   Shrimp And Ham Jambalaya   adapted from Emeril Lagasse

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Medium Onion -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 2 Stalks Celery -- Chopped
  • 4 Medium Bay Leaves
  • 1 Pound Ham -- Cubed
  • 1 Can Tomatoes -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Pepper
  • 1 Cup Rice
  • 1/2 Teaspoon Thyme
  • 1 Bunch Green Onion -- Chopped
Directions Heat oil and add onions, peppers and celery. Saute for 8 minutes. Add ham and saute for 2 minutes. Add tomatoes, garlic, salt, cayenne, pepper and thyme. Simmer for 10 minutes. Add rice and bay leaves. Simmer for 25 minutes. Add shrimp and green onions. Simmer until shrimp turn pink. Remove bay leaves and serve.
