  • 1 Teaspoon Salt
  • 1 Teaspoon Basil
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Dry Mustard
  • 1/2 Teaspoon New Mexico Green Chiles -- Ground
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1/2 Teaspoon Oregano
  • 1/2 Teaspoon Pepper
  • 1/4 Cup Flour
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- Chopped
  • 1 Large Bell Pepper -- Chopped
  • 2 Stalks Celery -- Chopped
  • 3 Medium Potato -- Chopped
  • 4 Cups Chicken Broth
  • 1 Large Fennel Bulb -- Chopped
  • 1 Teaspoon Ginger
  • 1 Pound Shrimp
Directions combine seasoning mix, Heat a skillet and brown the flour until the color of milk chocolate, remove and set aside.
In stock pot, saute in oil, onions, pepper, celery, potatoes and seasoning mix for about 12 minutes. add stock and flour mixture, bring to a boil, add everything except shrimp, cover and simmer 15 minutes. add shrimp, cover and simmer 5 minutes and serve.
Serves 4
