Cajun and Creole   -   Smothered Green Beans And Potatoes   adapted from Emeril Lagasse

  • 1/2 Pound Bacon -- Chopped
  • 1/4 Cup Flour
  • 2 Medium Onion -- Chopped
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Cayenne
  • 1/4 Teaspoon Pepper
  • 2 Cups Chicken Broth
  • 1 Pound French-Style Green Beans
  • 2 Medium Potatoes -- Cubed
Directions Saute bacon for 8 minutes. Remove and set aside. Add flour to bacon grease and saute fo 5 minutes, stirring constantly. Add onions and saute for 5 minutes. Add salt, cayenne, pepper and broth. Simmer for 5 minutes. Add beans and potatoes. Simmer for 20 minutes. Add bacon and serve.
