Cajun and Creole   -   Spicy Meat Loaf Ala Reine   adapted from Cookin With Queen Ida

  • 3 Slices Bread
  • 2 Pounds Ground Beef
  • 3 Stalks Celery -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 2 Teaspoons Cayenne
  • Salt And Pepper -- to taste
  • 2 Medium Eggs
  • 16 Ounces Stewed Red Ripe Tomatoes -- chopped
  • 1/2 Cup Water
Directions Preheat oven to 350. Soak bread in a little water a few seconds then drain and squeeze out. Combine all ingredients except tomatoes & water. Form into loaf in loaf pan. Pout tomaotes and water over the loaf. Bake for 30 minutes. Reduce heat to 325*, cover with foil, bake another 30 minutes.
