Cajun and Creole   -   Stewed Chicken And Sausage   adapted from Emeril Lagasse

Ingredients
  • 2 Pounds Chicken -- Cubed
  • 1 Teaspoon Oregano
  • 1/4 Teaspoon Cayenne
  • Salt And Pepper -- To Taste
  • 1/2 Cup Flour
  • 1/4 Cup Olive Oil
  • 1 Pound Smoked Sausage -- Sliced
  • 2 Medium Onion -- Chopped
  • 3 Stalks Celery -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 4 Medium Bay Leaf
  • 1 Clove Garlic -- Chopped
  • 6 Cups Chicken Broth
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Cayenne
  • 1/4 Cup Parsley -- Chopped
  • 1 Bunch Green Onion -- Chopped
Directions Season chicken with oregano, cayenne, salt and pepper. Toss chicken with flour and coat evenly. Saute chicken in oil until browned on all sides. Add sausage and saute for 5 minutes. Add onions, celery and peppers. Saute for 5 minutes. Add bay leaves and garlic. Saute for 5 minutes. Add broth, salt, and cayenne and bring to a boil. Reduce heat to a simmer. Let simmer for 30 minutes. Remove bay leaves, add parsley and green onions. Serve over rice.
