Cajun and Creole   -   Stuffed Cabbage   adapted from Cajun Family Cookbook

  • 3 Pounds Head Of Cabbage
  • 1 Cup Spinach -- cooked
  • 1 Tablespoon Parsley -- chopped
  • 5 Tablespoons Olive Oil
  • 1/2 Pound Ground Beef -- cooked
  • 1/2 Cup Parmesan Cheese -- grated
  • 2 Large Eggs -- beaten
  • Salt And Pepper -- to taste
  • Cajun Seasoning -- to taste
Directions Boil cabbage in salted water 5 minutes, drain well. Mix together remaining ingredients except for the oil. Spread leaves open gently, insert stuffing until all is used. Place in baking dish, sprinkle oil atop. Bake 25 minutes at 350*. Add hot water if pan becomes too dry.
Serves 4
