Cajun and Creole   -   Syrup Cake   adapted from cajun and creole cooking

Ingredients
  • 1 Cup Crisco
  • 1 Cup Molasses
  • 3 Medium Eggs -- beaten
  • 3 Cups Flour
  • 1 Tablespoon Baking Powder
  • 1 Pinch Salt
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1 Pinch Cloves -- ground
  • 4 Tablespoons Pecans -- chopped
  • 4 Tablespoons Raisins, Seedless
Directions Cream shortening and molasses until light and fluffy. Add eggs 1 at a time, beating will. Add flour, salt, and baking powder. beat well, add remaiing ingredients. Pour mixture into 9x13 baking pan, bake at 375* for 45 minutes.
Serves 1
