Eritrean   -   D'Ba Alicha (Mild Winter Squash Stew)   adapted from Taste of Eritrea by Olivia Warren

  • 4 Tablespoons Olive Oil
  • 2 Large Onion -- Chopped
  • 2 Teaspoons Ginger
  • 1/2 Teaspoon Turmeric
  • 1 Large Acorn Squash -- Cubed
  • 2 Medium Bell Pepper -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 8 Cups Chicken Broth
Directions Saute onions in oil until browned. Add garlic, ginger, turmeric and broth. Bring to a boil. Add squash and simmer for 20 minutes. Add bell peppers and simmer for 10 more minutes. Serve.
