Eritrean   -   D'Nish Zigni (Fiery Potato Stew)   adapted from Taste of Eritrea by Olivia Warren

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 4 Teaspoons Berbere -- Or Hot Sauce
  • 6 Medium Potato -- Cubed
  • 1 Can Tomato Paste
  • 1 Teaspoon Salt
  • 4 Cups Chicken Stock
Directions Saute onion in oil for 5 minutes. Add berbere, and potatos, saute for 5 minutes. Add broth and simmer for 10 minutes. Add tomato paste and salt, simmer for 10 more minutes. Serve with injera or pita bread.
