Eritrean   -   Tum'tumo (Lentils In A Savory Sauce)   adapted from Taste of Eritrea by Olivia Warren

  • 2 Cups Lentils
  • 1 Medium Onion -- Chopped
  • 3 Teaspoons Olive Oil
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Berbere -- Or Hot Sauce
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 2 Cloves Garlic -- Chopped
Directions Bring lentils to a boil with 6 cups water. Simmer for 20 minutes. Saute onion in oil until browned. Add salt, berbere, tomatoes, tomato paste and 1/2 cup water. Simmer for 5 minutes. Add garlic and lentils. Simmer for another 5 minutes and serve with injera or pita bread.
