European   -   Yugoslave Chicken And Red Pepper Soup   adapted from The Universal Kitchen by Elisabeth Rozin

  • 1 Medium Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1/4 Teaspoon Red Pepper Flakes
  • 2 Medium Red Bell Pepper -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Paprika
  • 2 Pounds Chicken -- Cubed
  • Salt And Pepper -- To Taste
  • 6 Cups Chicken Stock
  • 1 Medium Potato -- Chopped
  • 1 Small Cauliflower -- Chopped
Directions Saute onion, garlic, red pepper flakes and bell peppers in oil for 10 minutes. Add paprika and chicken. Saute until the chicken starts to brown. Add stock, potato, and cauliflower. Bring to a simmer and cook for 30 minutes. Season with salt and pepper and serve.
