European   -   Chicken With Wine And Olive Sauce (Rumania)   adapted from World's Best Cookbook

  • 3 Cloves Garlic -- minced
  • 3 Pounds Chicken Breast
  • 1 Tablespoon Flour
  • Chives -- to taste
  • Fennel -- to taste
  • Parsley -- to taste
  • 2 Cups Dry White Wine
  • 1/2 Cup Plain Yogurt
  • 15 Black Olives -- pitted Drained
  • Salt And Pepper -- to taste
Directions saute garlic in oil for 3 minutes. add chicken fry until browned on both sides. remove chicken from pan and keep warm. stir in flour, simmer for 2 minutes. add spices. saute to soften. gradually stir in wine. after 5 minutes add yogurt and olives. stir and return chicken to pan. simmer for 45 minutes. Serve with rice.
