European   -   Fedelini With Fowl (Switzerland)   adapted from The world of Pasta

  • 5 Slices Bacon -- diced
  • 4 Tablespoons Butter
  • 3 Pounds Chicken Breast
  • 3 Medium Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 8 Large Tomatoes -- chopped
  • 1 Cup Red Wine
  • 1/2 Teaspoon Oregano
  • 1 Pinch Rosemary
  • Salt And Pepper -- to taste
  • 12 Ounces Mushroom -- sliced
  • 2 Cups Peas
  • 1 Pound Fedelini -- cooked
Directions In large pot. saute bacon for 7 minutes. add butter, when melted add chicken and brown on all sides. remove chicken and set aside. add onions and garlic, cook until the onions are soft. add chicken, tomatoes, wine, oregano, rosemary, salt, pepper, peas and mushrooms. boil, reduce heat, cover and simmer for 25 minutes. serve over pasta.
