Ingredients

- 1 Tablespoon Olive Oil
- 1 Pound Chicken Breast -- chopped
- 1 Small Onion -- chopped
- 2 Cloves Garlic -- chopped
- 1/2 Cup Red Wine Vinegar
- 1/2 Teaspoon Thyme
- Salt And Pepper -- to taste
- 2 Large Tomatoes -- chopped
- 1 Small Can Ripe Olives -- drained

Directions

heat oil over medium high. Add chicken, onions and garlic. Stir fry for 5 minutes. stir in remaining ingredients, cover and simmer until cooked throuhout.
