European   -   Paradise Soup (Slovakia)   adapted from central european cooking

  • 4 Large Tomatoes -- chopped
  • 4 Cups Beef Broth
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion -- chopped
  • 2 Tablespoons Flour
  • 2 Medium Carrots -- chopped
  • 2 Stalks Celery -- chopped
  • 1 Tablespoon Lemon Juice
  • 1 Teaspoon Sugar
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 3/4 Cup Cooked Rice
Directions simmer tomatoes in broth for 15 minutes. In another pan, saute onion, carrots, and celery in olive oil until onion is brown. add flour to onion mixture and saute for 1 minute more. add onion mixture to broth along with remaining ingredients except rice. Simmer for 30 minutes. add rice to broth and serve.
