European   -   Penne Rigati With Chicken (Switzerland)   adapted from The world of Pasta

  • 6 Medium Tomatoes -- chopped
  • 2 Medium Onion -- chopped
  • 1/2 Cup Chicken Broth
  • 1 Tablespoon Olive Oil
  • 6 Slices Bacon -- julienned
  • 1 Whole Chicken Breast -- julienned
  • 2 Tablespoons Flour
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 3/4 Cup Dry White Wine
  • 2 Cloves Garlic -- finely chopped
  • 4 Large Basil Leaves -- chopped
  • 4 Tablespoons Butter
  • 1 Pound Penne -- cooked
  • 1 Cup Gruyere Cheese -- grated
Directions In saucepan, add tomatoes, onions, and chicken broth, simmer 10 minutes. in another saucepan, heat oil and brown bacon and chicken. sprinkle in flour, salt, and pepper. add wine and simmer until half the wine evaporates. stir in tomato mixture. boil, reduce heat and simmer uncovered for 20 minutes. combine garlic, basil and butter together in blender or food processor. add to tomato mixture, simmer for 5 minutes. mix sauce and pasta together and serve sprinkle with cheese.
