European   -   Rodekool (Holland)   adapted from sallie haugendereus

  • 1 1/2 Tablespoons Butter
  • 1 Small Red Cabbage -- thinly sliced
  • 1 Medium Tart Apples -- chopped
  • 1/4 Cup Vinegar
  • 1 Cup Red Currant Jelly -- optional
  • 1/4 Cup Water
  • 1/2 Teaspoon Salt
  • 1 Pinch Sugar
Directions Melt butter in a 2 quart saucepan. add cabbage, apples, vinegar, jelly and water. cover and simmer until cabbage is tender about 1 hour. add salt and sugar. Serve.
