European   -   Rumanian Pork And Noodles   adapted from The world of Pasta

  • 5 Medium Eggs
  • 2 Teaspoons Salt
  • 1 Pound Fine Noodles -- cooked
  • 2 Slices White Bread -- small pieces
  • 1/2 Cup Half And Half -- blended with bread
  • 1 1/2 Pounds Ground Pork
  • 1 Medium Onion -- chopped
  • 1/2 Teaspoon Oregano
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 3 Tablespoons Parsley -- chopped
  • 1 Stick Butter -- cut into pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Provolone Cheese -- grated
Directions in a bowl, beat 3 eggs with salt. gently stir in the noodles until coated with the egg. reserve. into the bowl that the bread and cream have been blended, add pork, onion, oregano, salt, pepper and parsley. mix well with hands. then beat with a spoon until smooth and light. butter a large casserole dish, arrange 1/3 noodles across the bottom. even spoon, half the pork mixture over that. dot with 1/3 of the butter pieces. spread next 1/3 of noodle, then meat mixture, then another 1/3 of the butter. add the last of the noodles and dot with the remaining butter. cover and cook at 400 degrees for 35 minutes. in a small bowl, beat remaining 2 eggs, sour cream and cheese until well blended. pour over the pork, noodle mixture, cover and cook for 30 more minutes. remove cover and cook for 20 minutes or until brown and bubbling. Rumanians unmold this dish by running a knife around the dish and then place a plate over and invert.
