European   -   Supa Od Kupuse (Cabbage Soup) Yugoslavia   adapted from The Balkan Cookbook by Inge Kramarz

  • 1/2 Pound Bacon -- Chopped
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion -- Chopped
  • 2 Pounds Cabbage -- Shredded
  • Salt And Pepper -- To Taste
  • Paprika -- To Taste
  • 2 Quarts Chicken Stock
  • 2 Large Smoked Sausage -- Sliced
  • 1 Tablespoon Flour
  • 1 Medium Egg
  • 2 Tablespoons Sour Cream
  • 1 Lemon Lemon Juice
Directions Saute bacon until crisp. Add olive oil and onion and saute for 5 minutes. Add cabbage, salt, pepper and paprika. Simmer for 5 minutes. Add stock and simmer for 30 minutes. Sprinkle flour over sausages and add to the soup. Simmer for 10 minutes. Combine egg, sour cream and lemon juice, beat well. Add to soup in a thin stream while stirring. Remove from heat and serve.
