European   -   Swiss Chard And Blackeyed Peas   adapted from bean banquet

  • 1 Pound Blackeyed Peas
  • 2 Pounds Swiss Chard
  • 4 Tablespoons Olive Oil
  • 2 Medium Onion -- chopped
  • 2 Cloves Garlic -- chopped
  • 1/4 Teaspoon Crushed Red Pepper
  • 1/4 Teaspoon Allspice
  • 1 Cup Black Olives -- halved
  • Salt And Pepper -- to taste
Directions cook peas according to package directions. drain and reserve 1 cup of liquid. wash and chop swiss chard. set aside. saute onion, garlic, and spices in oil until onion is lightly brown. add reserved broth and swiss chard. bring to boil reduce heat and simmer until chard is cooked. add peas and olives. bring to boil. lower heat and simmer 5 minutes. serve.
