Finnish   -   Courgettes En Gratin   adapted from The Vegetarian Bistro

  • 4 Medium Onion -- thinly sliced
  • 3 Tablespoons Olive Oil
  • Sugar -- to taste
  • Salt And Pepper -- to taste
  • 6 Cloves Garlic -- finely chopped
  • 2 Medium Zucchini -- sliced
  • 14 Ounces Tomatoes -- diced
  • 1 Tablespoon Herbes De Provence
  • 6 Ounces Gruyere Cheese -- shredded
  • 5 Tablespoons Parmesan Cheese -- grated
  • 1 Cup Garlic Bread Crumbs
Directions Preheat oven to 350*.
Saute onions in 2 tabs olive oil until softened (15 minutes).
Sprinkle with sugar & salt as the onions cook. Set aside.
In food processor, make garlic puree.
In baking dish, layer 1/3 zucchini, dot with garlic, layer with 1/2 oinons, 1/3 tomatoes, sprinkle with herbes, salt & pepper. Repeat.
Sprinkle with bread crumbs and drizzle with olive oil.
Bake 1 hour. Pour off excess liquid.
Scatter both cheeses, return to oven another 25 minutes.
May be served warm or cold.
