Finnish - Easter Bread

Ingredients
|
- 2 Packages Dry Yeast
- 1/4 Cup Warm Water
- 3 Cups Milk -- scalded & cooled
- 7 Cups White Flour
- 4 Egg Yolks
- 1 Cup Sugar
- 1 Teaspoon Salt
- 2 Teaspoons Cardamom
- 1 Tablespoon Orange Peel
- 1 Tablespoon Lemon Peel
- 1/2 Cup Raisins -- chopped
- 1/2 Cup Almonds -- chopped
- 1 Cup Butter -- melted
- **Frosting**
- 2 Cups Confectioner's Sugar
- 4 Tablespoons Cold Water
- Almond Flavoring -- to taste

Directions
|
1. Dissolve yeast in warm water. 2. Combien 2 cups of warm milk with yeast mixture. 3. Add 2 cups flour, beat until smooth. 4. Cover, let rise 45 minutes. 5. Beat egg yolks and sugar together until light & fluffy. 6. Add this mixture, and everything but butter, flour milk. beat. 7. Add milk & butter, beat, add flour slowly, stirring until stiff dough is formed. 8. Knead until smooth. 9. In bowl, grease top of dough, cover and let rise about 1 hour. 10. You can bake in 3 coffee cans, loaf pans, or 1 giant metal pail. 11. Fill pans 1/2 full, let rise until even with rim of pan. 12. Bake at 350*, 1 hour. FROSTING Combine all 3 ingredients, drizzle frosting on top of hot bread.
