Finnish   -   Lamb With Horseradish (Lammasviillokki)   adapted from The Finnish Cookbook by Beatrice A Ojakangas

  • 2 Pounds Lamb -- Cubed
  • 3 Tablespoons Olive Oil
  • 2 Cups Beef Stock
  • 2 Teaspoons Salt
  • 1/2 Teaspoon White Pepper
  • 2 Teaspoons Dill
  • 1 Tablespoon Butter
  • 3 Tablespoons Flour
  • 4 Tablespoons Beef Broth
  • Salt -- To Taste
  • 2 Tablespoons Horseradish
Directions Saute lamb in oil until well browned. Add broth, salt, pepper and dill. Cover and cook for 1 hour. Melt butter in another pan. Add flour and saute for 2 minutes. Gradually add in broth, salt and horseradish. Add this sauce to the lamb. Stir well and simmer for 5 minutes. Serve with boiled new potatoes.
