French   -   Artichokes Braised In White Wine   adapted from The Vegetarian Bistro

  • 3 Medium Onion -- finely chopped
  • 3 Medium Carrot -- chopped
  • 6 Cloves Garlic -- finely chopped
  • 3 Tablespoons Olive Oil
  • 4 Large Artichoke Hearts -- quartered
  • 1 Tablespoon Thyme -- finely chopped
  • 1 Tablespoon Parsley -- finely chopped
  • 1 Cup Dry White Wine
  • 1 Cup Water
  • Salt And Pepper -- to taste
  • 1 Lemon Lemon Juice
Directions In medium saute pan, saute onion, carrots and garlic in olive oil for 8 minutes. Add artichokes, thyme, parsley, wine and water. Bring to a boil, reduce heat and simmer for 10 minutes or until artichokes are tender and liquid has evaporated. Season with salt, pepper and lemon juice. Serve.
