French - Artichokes Braised In White Wine

Ingredients
|
- 3 Medium Onion -- finely chopped
- 3 Medium Carrot -- chopped
- 6 Cloves Garlic -- finely chopped
- 3 Tablespoons Olive Oil
- 4 Large Artichoke Hearts -- quartered
- 1 Tablespoon Thyme -- finely chopped
- 1 Tablespoon Parsley -- finely chopped
- 1 Cup Dry White Wine
- 1 Cup Water
- Salt And Pepper -- to taste
- 1 Lemon Lemon Juice

Directions
|
In medium saute pan, saute onion, carrots and garlic in olive oil for 8 minutes. Add artichokes, thyme, parsley, wine and water. Bring to a boil, reduce heat and simmer for 10 minutes or until artichokes are tender and liquid has evaporated. Season with salt, pepper and lemon juice. Serve.
