French   -   Baked Leek And Onion Soup Gateau   adapted from Soup and Bread by Crescent Dragonwagon

  • 4 Tablespoons Butter
  • 4 Large Onion -- Sliced
  • 2 Medium Leek -- Chopped
  • 1 Teaspoon Sugar
  • 2 Teaspoons Soy Sauce
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 8 Ounces Gruyere Cheese -- Grated
  • 3 Quarts Chicken Stock
  • Salt And Pepper -- To Taste
Directions Saute onions and leeks in butter until very soft and brown, about 30 minutes. Sprinkle with sugar and saute for 5 minutes. Add soy sauce. Simmer for 1 minute. Add tomatoes, tomato paste, stock, salt and pepper. Simmer for 30 minutes. Place in individual oven-proof serving bowls. Sprinkle with grated cheese and bake under the broiler until the cheese is starting to brown. Serve.
