French   -   Brandade Aux Legumes   adapted from The Vegetarian Bistro

  • 1 Cup White Beans -- cooked
  • 1 Large Baking Potatoes -- peeled and cubed
  • 1 Medium Bay Leaf
  • 1 Medium Onion -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • 1 Pinch Herbes De Provence
  • 1 Dash Lemon Juice
  • Salt And Pepper -- to taste
  • Cayenne -- to taste
Directions drain beans and reserve liquid, mash coarsely and set aside. Meanwhile boil potato with bay leaf until potato is tender, drain and discard leaf. Mash potato. saute onions, 2 clove garlic in half of the olive oil until soft. add mashed beans and potatoes and heat together. Remove mixture from heat, beat in raw garlic and remaining olive oil. season with remaining ingredients. serve in a crock or surrounded by vegetables.
