French   -   Brown Lentil, Red Bean, Broccoli And Pasta Shell Stew   adapted from Vegetarian Pasta by Marlena Spieler

  • 9 Ounces Brown Lentils
  • 4 Cups Vegetable Broth
  • 3 Ounces Tomato Paste
  • 1 Can Diced Tomatoes
  • 1 Bunch Broccoli -- cut into bite size
  • 1 Can Red Kidney Beans
  • 6 Ounces Pasta Shells
  • 1 Teaspoon Thyme
  • 1 Teaspoon Sage
  • 1 Teaspoon Rosemary
  • 4 Cloves Garlic -- finely chopped
  • 8 Ounces Grated Cheese -- any kind
  • Salt And Pepper -- to taste
  • 1 Tablespoon Extra Virgin Olive Oil
  • 3 Teaspoons Parsley -- finely chopped
Directions Cook lentils in broth about 1 hour. Add tomato paste, tomatoes, broccoli, beans, pasta, herbs, and half the garlic. Cook until pasta is tender. Stir in remaining garlic, cheese, salt and pepper. Serve sprinkle with olive oil and parsley.
