French   -   Carrot Orange Soup   adapted from Soup and Bread by Crescent Dragonwagon

  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 4 Cups Chicken Stock
  • 1 Tablespoon Honey
  • 14 Small Carrot -- Chopped
  • 1 Can Tomato Paste
  • 2 Tablespoons Rice
  • 1 Orange Orange Juice
  • Salt And Pepper -- To Taste
  • 1/8 Teaspoon Nutmeg
  • 1/4 Cup Cashews -- Toasted
Directions Saute onion in butter for 5 minutes. Add broth, honey, carrots, tomato paste and rice. Bring to a boil, cover and simmer for 30 minutes. Add orange juice, salt, and pepper. Soup may be pureed at this point. Top with cashews and serve.
