French - Carrot Orange Soup

Ingredients
|
- 2 Tablespoons Butter
- 1 Large Onion -- Chopped
- 4 Cups Chicken Stock
- 1 Tablespoon Honey
- 14 Small Carrot -- Chopped
- 1 Can Tomato Paste
- 2 Tablespoons Rice
- 1 Orange Orange Juice
- Salt And Pepper -- To Taste
- 1/8 Teaspoon Nutmeg
- 1/4 Cup Cashews -- Toasted

Directions

Saute onion in butter for 5 minutes. Add broth, honey, carrots, tomato paste and rice. Bring to a boil, cover and simmer for 30 minutes. Add orange juice, salt, and pepper. Soup may be pureed at this point. Top with cashews and serve.
