French   -   Cavier De Lentilles   adapted from The Vegetarian Bistro

  • 1 Cup Green Lentils -- cooked
  • 1 Small Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 2 Medium Ripe Tomatoes -- diced
  • 1 Tablespoon Fresh Parsley -- finely chopped
  • 1 Tablespoon Fresh Chervil -- finely chopped
  • 2 Tablespoons Olive Oil
  • 2 Teaspoons Wine Vinegar -- to taste
  • Salt And Pepper -- to taste
  • 2 Medium Hard Boiled Eggs -- diced
  • Toast Slices
  • Frisee Lettuce -- for garnish
Directions combine lentils with onion, garlic, tomatoes, parsley and chervil. season with oil, vinegar, salt and pepper to taste. then add eggs. pile onto a small plate and set out with toast points and a handful of frisee.
