Ingredients

- 1 Cup Green Lentils -- cooked
- 1 Small Onion -- finely chopped
- 1 Clove Garlic -- finely chopped
- 2 Medium Ripe Tomatoes -- diced
- 1 Tablespoon Fresh Parsley -- finely chopped
- 1 Tablespoon Fresh Chervil -- finely chopped
- 2 Tablespoons Olive Oil
- 2 Teaspoons Wine Vinegar -- to taste
- Salt And Pepper -- to taste
- 2 Medium Hard Boiled Eggs -- diced
- Toast Slices
- Frisee Lettuce -- for garnish

Directions
|
combine lentils with onion, garlic, tomatoes, parsley and chervil. season with oil, vinegar, salt and pepper to taste. then add eggs. pile onto a small plate and set out with toast points and a handful of frisee.
