French   -   Celery And Tomato Soup Aurore   adapted from Soup and Bread by Crescent Dragonwagon

  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 1 Teaspoon Celery Seeds
  • 1 Bunch Celery -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 4 Cups Chicken Stock
  • 1/4 Cup Brandy
  • 1 Tablespoon Honey
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Cornstarch
  • 3 Tablespoons Water
  • Sour Cream
Directions Saute onion in butter for 5 minutes. Add celery seeds and saute for 2 minutes. Add celery and saute for 3 minutes. Add tomatoes and simmer for 15 minutes. Add stock, brandy and honey. Bring to a boil and simmer for 30 minutes. Soup may be pureed as this point if desired. Add salt and pepper. Combine cornstarch with water and add to the soup. Allow to thicken the soup about 10 minutes. Serve with a dollop of sour cream.
