French   -   Chickpeas In Cumin-Parsley Vinaigrette   adapted from The Vegetarian Bistro

  • 2 Cups Cooked Chickpeas
  • 2 Tablespoons Parsley -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 1 Teaspoon Cumin
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Balsamic Vinegar
  • 1 Lemon Lemon Juice
  • Salt And Pepper -- to taste
Directions Combine all ingredients. Cover and refrigerate until ready to serve.
