French   -   Choukroute (Alsace)   adapted from The Vegetarian Bistro

Ingredients
  • 4 Cups Sauerkraut
  • 1 Tablespoon Margarine
  • 1 Small Onion -- sliced
  • 3 Cloves Garlic -- chopped
  • 1/2 Cup Riesling Wine
  • 8 Whole Juniper Berries
  • Pepper -- to taste
  • 1/2 Teaspoon Mustard Seeds -- crushed
  • 1/2 Teaspoon Caraway -- ground
  • 1 Teaspoon Dijon Mustard
Directions Rinse saurekraut to remove excess salt. Drain and set aside. Saute onions in butter, add garlic, 2 minutes, add reamining ingredients including sauerkraut, reduce heat, simmer uncovered 30 minutes.
Serves 4
