French   -   Corsican Goat Cheese And Mint Omelet   adapted from The Vegetarian Bistro

  • 1 Tablespoon Butter
  • 2 Tablespoons Fresh Mint -- chopped
  • 2 Medium Eggs -- beaten
  • 1 Tablespoon Milk
  • Salt And Pepper -- to taste
  • 3 Tablespoons Aged Goat Cheese -- crumbled
Directions Melt butter in omelet pan with half the mint. Add eggs and cook until done. Sprinkle cheese over the eggs and allow cheese to melt just slightly. fold egg over to make omelet and place on plate. sprinkle with remaining mint.
Serves 1
