French   -   Corsican Soup   adapted from The Vegetarian Bistro

Ingredients
  • 1 Large Onion -- finely chopped
  • 1 Small Leek -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • 1 Tablespoon Olive Oil
  • Salt And Pepper -- to taste
  • 2 Medium Potatoes -- diced
  • 2 Large Tomatoes -- diced
  • 2 Tablespoons Tomato Paste
  • 1 Medium Bay Leaf
  • 2 Pinches Herbes De Provence
  • 4 Cups Vegetable Broth
  • 1 Cup Cooked Cranberry Beans
  • 1 Tablespoon Parsley -- finely chopped
  • 1 Tablespoon Chives -- finely chopped
  • 1 Tablespoon Marjoram -- finely chopped
  • 1 Tablespoon Oregano -- finely chopped
  • 1 Tablespoon Basil -- finely chopped
  • 1 Tablespoon Tarragon -- finely chopped
  • 1 Tablespoon Chervil -- finely chopped
  • 1 Tablespoon Rosemary -- finely chopped
  • 1 Tablespoon Sage -- finely chopped
Directions In a large saucepan, saute onion, leek and garlic in oil until vegetables are softened about 5 minutes. Sprinkle with salt and pepper. Add potatoes and cook for 8 minutes. Add tomatoes and cook for 5 minutes. Stir in tomato paste, bay leaf, herbes de provence and stock. Bring to a boil, reduce heat and simmer until potates are tender about 10 minutes. Add beans and cook until heated through. Remove and discard bay leaf. Stir in herbs and serve.
