French   -   Creamy Onion Soup With Tiny Pasta   adapted from Vegetarian Pasta by Marlena Spieler

  • 10 Medium Onion -- chopped
  • 1 Ounce Butter
  • 4 Cups Vegetable Broth
  • 4 Ounces Half And Half
  • 1 Medium Egg -- beaten
  • 8 Ounces Small Star Pasta
  • 3 Ounces Parmesan Cheese -- grated
Directions Saute onions in butter for 30 minute on low heat until golden brown and carmelized. Add broth and bring to a boil, reduce heat and simmer for 1 hour. Combine cream and egg. Stir into the soup and simmer for 5 minutes. Do not allow it to boil. Cook pasta as directed. Serve soup over cooked pasta. Sprinkle with cheese.
