French   -   Cumin Scented Carrot And Tomato Soup   adapted from The Vegetarian Bistro

  • 1 Medium Onion -- chopped
  • 3 Medium Carrots -- thinly sliced
  • 1 Tablespoon Olive Oil
  • 1 Pinch Sugar
  • 1/4 Teaspoon Cumin Seed
  • 5 Cloves Garlic -- sliced
  • 1/2 Cup Dry White Wine
  • 1 Large Tomato -- diced
  • 4 Cups Vegetable Broth
  • 1 Teaspoon Herbes De Provence
  • Salt And Pepper -- to taste
Directions In heavy saucepan, saute onions, carrot, sugar and cumin seeds in oil until lightly browned about 7 minutes. Add garlic and pour in wine and cook until the wine is reduced by half. Add the tomatoes, stock, or herbes de provence, salt and pepper. Cook for 10 minutes or until the carrots are tender. Serve.
