French   -   Dijon Style Steak   adapted from Fresh From France by Faye Levy

  • 2 Pounds Steak
  • 1 Tablespoon Oil
  • 2 Tablespoons Butter
  • Salt And Pepper -- to taste
  • 1 Shallot -- minced
  • 1/3 Cup Dry White Wine
  • 1 Cup Cream
  • 2 Tablespoons Dijon Mustard
  • 1/4 Teaspoon Dried Thyme
  • 1 Tablespoon Dried Parsley
  • 2 Teaspoons Green Peppercorns
Directions Saute the steaks in the oil and butter in a large skillet 2-3 minutes per side. Transfer steaks to ovenproof platter, season with salt & pepper and keep warm in 180* degree oven. Saute shallots 1 minute, add wine, boil reduce to about 2 tablespoons, about 2 minutes. Add cream, boil, about 3 minutes. Reduce heat, stir in mustard. Turn off heat and add spices. Stir in well and pour sauce over steaks and serve.
