French   -   Eggs With Artichokes And Chunky Tomato Sauce   adapted from The Vegetarian Bistro

Ingredients
  • 3 Cloves Garlic
  • Salt -- to taste
  • 1 Medium Onion -- chopped
  • 2 Tablespoons Olive Oil
  • 8 Large Tomatoes -- diced
  • 1 Teaspoon Herbes De Provence
  • 1 Pinch Sugar
  • Pepper -- to taste
  • Red Pepper Sauce -- to taste
  • 4 Large Artichoke Hearts
  • 1 Teaspoon Vinegar
  • 1 Tablespoon Chives -- finely chopped
Directions Puree garlic and salt to a paste in a food processor. Set aside. In a large saute pan, saute onion in olive oil until softened about 5 minutes. Stir in 1/3 of the garlic paste along with tomatoes. Cook over medium heat until thickened. Add the herbes de provence, sugar, salt, pepper and red pepper sauce. Add 1/3 more of the paste. Stir and keep warm. In medium saute pan, saute artichokes and remaining garlic paste for about 5 minutes. Serve artichokes, topped with tomato sauce and sprinkle with chives.
