French   -   French Lentils With Pasta And Mint   adapted from Versatile Grain and Elegant Bean

Ingredients
  • 2 Tablespoons Butter
  • 1 Medium Onion -- Chopped
  • 1 Medium Leek -- Chopped
  • 1 Stalk Celery -- Chopped
  • 1 Medium Carrot -- Chopped
  • 2 Cups Chicken Stock
  • 1 Cup White Wine
  • 1 Cup French Lentils
  • 1 Tablespoon Parsley -- Chopped
  • 1 Teaspoon Thyme
  • 1 Medium Bay Leaf
  • 1/4 Cup Acini De Pepe Pasta
  • 1/4 Pound Prosciutto -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Teaspoon Balsamic Vinegar
  • 1 Tablespoon Mint -- Chopped
Directions Saute onion, leeks, celery and carrots in butter for 5 minutes. Add stock, wine and lentils. Bring to a boil. Add parsley, thyme and bay leaf. Cover and simmer for 30 minutes. Cook pasta as directed. Remove bay leaf and discard. Stir in pasta, prosciutto, salt, pepper and vinegar. Sprinkle with mint and serve.
