French   -   French Marinated Mushrooms   adapted from ethnic cuisine

  • 1 Pound Mushrooms -- small
  • 1/3 Cup Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • 1 Large Shallot -- chopped
  • 1 Clove Garlic
  • 1 Teaspoon Dijon Mustard
  • Salt And Pepper -- to taste
  • 3 Tablespoons Parsley -- chopped
Directions Combine all ingredients but the mushrooms and shake or beat well. Pour over mushrooms in a nonreactive bowl, marinate in refrigerater at least 6 hours, longer is better (not more than 24, they get mushy).
Serves 6
