French   -   French Potato Salad   adapted from unknown

  • 2 Pounds Potatoes
  • 1 Clove Garlic
  • 1/4 Teaspoon Bouillon Powder
  • 1/3 Cup Hot Water
  • 1/3 Cup Dry White Wine
  • 3 Tablespoons Parsley
  • --Tarragon Dressing--
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Tarragon Vinegar
  • 2 Teaspoons Chives -- chopped
  • 1 Teaspoon Salt
  • 1 Teaspoon Dark Mustard
  • 1/2 Teaspoon Tarragon
  • 1/8 Teaspoon Pepper
Directions Heat 1 inch salted water to boiling. Add potatoes, bring to boil, reduce heat, cover and cook 35 minutes. Drain and cool. Add garlic to 2 qt bowl, slice the potatoes into bowl. Dissove the bouillon in the hot water, add wine, pour both over potatoes. Marinate for 2 hours in refrigerator. Drain off liquid. Top with tarragon dressing and parsley, serve.
To make dressing shake all ingredients in tightly covered jar.
Serves 6
