French   -   Goat Cheese Pastries With Sun-Dried Tomato Vinaigrette   adapted from The Vegetarian Bistro

  • 12 Ounces Puff Pastry Shells
  • 3 Teaspoons Rosemary -- finely chopped
  • 8 Ounces Goat Cheese -- crumbled
  • 3 Cloves Garlic -- finely chopped
  • 8 Large Sun-Dried Tomatoes -- chopped
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Balsamic Vinegar
Directions Preheat oven to 400 degree. On lightly floured surface roll out pastry dough and cut into 8 five inch rounds. Place 4 rounds on a baking sheet. Sprinkle with rosemary, goat cheese and garlic. Wet pastry edges. Top with another round. Press edges together to seal. Cut several holes in the top to allow steam to escape. Bake for 15 minutes or until golden brown. Place on plate, sprinkle on tomatoes, drizzle with olive oil and balsamic vinegar.
