French   -   Goat-Cheese Creamed Spinach   adapted from The Vegetarian Bistro

  • 2 Pounds Fresh Spinach
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • 2 Large Green Onion -- finely chopped
  • 3 Tablespoons Sour Cream
  • 6 Ounces Goat Cheese -- crumbled
Directions cook spinahc in boiling water until tender, about 5 minutes.
In small saucepan, saute garlic in olive oil until golden.
Add spinach, cook 3 minutes. Add onions and sour cream. Increase heat and cook 5 minutes. Stir in goat cheese and allow to melt. Stir vigourosly to break up spinach and serve.
Serves 4
