French   -   Lemon Scented Spinach Spread   adapted from The Vegetarian Bistro

  • 1 Bunch Spinach -- cut into strips
  • 6 Medium Chard Leaves -- chopped
  • 3 Medium Shallot -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Butter
  • 1 Handful Arugula -- chopped
  • Nutmeg -- to taste
  • 2 Tablespoons Sour Cream
  • 1 Tablespoon Fresh Dill -- finely chopped
  • 3 Tablespoons Fresh Parsley -- finely chopped
  • 1/8 Teaspoon Lemon Zest -- grated
  • 1/2 Lemon Lemon Juice -- to taste
  • Salt And Pepper -- to taste
  • Pain Levane Bread -- thinly sliced
Directions bland spinach and chard until just bright green and then rinse in cold water. squeeze dry. Let drain in colander for a few moments. Meanwhile, saute shallots and garlic in butter until soft. add arugula, spinach and chard. cook until greens have absorbed the butter. remove from heat, stir in nutmeg, sour cream, dill, parsley, lemon zest, lemon juice, salt and pepper. serve on the bread.
