French   -   Little Burgundian Cheese Pastries   adapted from The Vegetarian Bistro

  • 5 Tablespoons Butter
  • Salt -- to taste
  • 3/4 Cup Water
  • 1 Cup Flour
  • 3 Medium Eggs
  • 1 Cup Gruyere Cheese -- diced
  • Cayenne -- to taste
Directions Preheat oven to 350 degrees. In large saucepan, combine butter, salt, and water. Bring to boil over high heat then remove from heat and all the flour at once. Mix well. Return to heat an stir until the dough comes away from the sides in 1 big ball about 4 minutes. Beat in eggs one at a time. Remove from heat and beat in cheese and cayenne. Arrange spoonfuls on greased baking sheet. Bake for 20 minutes or until golden brown.
