French   -   Lou Cachat   adapted from Pedaling Through Provence by Sarah Leah Chase

  • 12 Ounces Goat Cheese -- Crumbled
  • 1/3 Cup Olive Oil
  • 1/2 Cup Brandy
  • 3 Cloves Garlic -- Slivered
  • 1 Tablespoon Thyme -- Fresh
  • 1 Tablespoon Rosemary -- Fresh
  • Salt And Pepper -- To Taste
  • French Bread Slice -- Toasted
Directions Place goat cheese in a crock and drizzle with olive oil and brandy. Add garlic and herbs. With a fork, mash and blend until you have a course textured spread. Let marinate for 12 hours before serving. Serve spread over the toasted french bread.
